Yikes! I have a garden!

My garden's overflowing - and surprisingly, not with weeds!

I have garlic that's as tall as my toddler. Snow peas sprawling over my repurposed tomato cage. Onions popping up all over. Spinach that I forgot that I planted. Lettuce that's threatening to bolt already.

In other words, I need to get cooking.

If you have any fabulous ideas - particularly simple ones - for me to use up my bounty this week, I'd love to see them!

Our bumper crop of spinach has totally bolted (we've already had 3 days above 90 degrees!) But... we're still picking like mad and making every spinach recipe we can think of! The easiest by far is to just sautee it in butter with some scallions for a side dish, or add some eggs and cheese and make it the main course. We've also made minestrone, spinach lasagna and numerous pasta Florentine dishes. A few of the recipes are on my blog if you want to check them out. http://www.greeniacdigest.com.

Happy Cooking!

I love a fresh lettuce and spinach salad with whatever else the garden has to offer. My garden is a couple weeks away from producing these gems and I am craving a fresh salad.
